Happy spooky season! If you follow me on Instagram, you are probably well aware of my Halloween obsession. It is by far my favourite holiday. I love the creepy decor, costume parties, and delicious pumpkin recipes! One of my go-to breakfast recipes during this time of year are these gluten and dairy-free oatmeal pumpkin pancakes. They take less than 10 minutes to make, taste fantastic, and include an extra gut health boost.
Most people take collagen supplements to improve the health of their nails, skin, and hair. What may be surprising is that collagen is also a great gut health supplement!
Collagen plays a crucial role in supporting the integrity of the gut lining, which acts as a protective barrier between the digestive system and the bloodstream. In today's society, it's not uncommon for this barrier to weaken, potentially allowing unwanted substances to 'leak' into the bloodstream, a condition known as leaky gut syndrome. Incorporating collagen into your diet can help fortify the gut lining, reducing the risk of developing leaky gut syndrome.
This recipe makes 4 medium-sized pancakes, but can easily be doubled or tripled if you feel like sharing.
Oatmeal Pumpkin Pancakes with Collagen
Ingredients
1/2 cup gf sprouted rolled oats
1 scoop of collagen powder
1 tsp ground cinnamon
1 tsp baking powder
3 tbsp pumpkin puree
1 egg
extra virgin olive oil (to grease pan)
almond butter (optional topping)
raw honey (optional topping)
Step 1
Drizzle a large frying pan with extra virgin olive oil and preheat over medium heat.
Step 2
Add all of the ingredients (except for the oil) to a medium-sized mixing bowl and combine.
Step 3
Separate the batter into four equal sections and scoop onto the preheated pan. Flatten into a pancake shape and cook for approximately 1 minute per side. They will look golden-brown once they are cooked.
Do not overcrowd the pan! You may need to cook 2-3 pancakes at a time.
Step 4
Place cooked pancakes on a plate and add your favourite toppings. I used almond butter, more cinnamon, and raw honey. Other tasty topping ideas are maple or date syrup, df chocolate chips, berries, or jam. Enjoy!
Keep in mind that there is no sweetener added to the pancake batter. If you want a little sweetness, it has to come from the toppings!
